Spicy Tofu Spring Rolls
easy, nutrient-packed spicy tofu spring rolls with a dipping peanut sauce.

Ingredients
- 1 pkg extra firm tofu (chopped into 1 inch cubes)
- 1 tablespoon garlic powder
- 1 tablespoon chili powder
- 1 tablespoon corn starch
- salt
- pepper
- 1 bell pepper (sliced)
- 1/4 purple cabbage (chopped)
- 1/2 cup carrots (sliced)
- 1 avocado (sliced)
- 1 cup romaine (sliced)
- 1 cucumber (sliced)
- 1 jalapeño (sliced; leave seeds for extra spicy)
spicy peanut sauce
- 1/2 cup peanut butter
- 1/4 cup low sodium soy sauce
- 2 tablespoon sesame oil or olive oil
- 2 tablespoon water
- 1 tablespoon sriracha

Preheat the oven to 400 degrees.

Toss tofu in seasonings and lay out on a parchment paper lined baking sheet.

Bake for 30 minutes or until outsides are crispy.

While the tofu cooks, chop all your veggies.

Return tofu to bowl and toss in 1/2 peanut sauce.

Submerge spring roll wraps in water for 15-20 seconds and set out on a cutting board.

Layer all ingredients like I do in the video.

Roll like a burrito and serve with second half of spicy peanut sauce!
