Mongolian Beef Lunch Bowls

Ingredients

Protein & Veggies

  • 1 lb lean grass-fed ground beef
  • 2 white onions (sliced)
  • 1 bunch green onions (cut long)

Spice & Aromatics

  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tbsp salt
  • fresh garlic (minced)
  • fresh ginger (minced)

Healthy Mongolian-Style Sauce

  • 2 tbsp coconut aminos or low-sodium soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1/2–1 tsp sesame oil
  • red pepper flakes (to taste (optional))

Optional Toppings / Add-Ins

  • jalapeños
  • bell peppers
  • mushrooms
  • bok choy
  • bamboo shoots
  • bean sprouts

For Serving

  • serving steamed rice (white or brown)

Method

    Heat a large skillet over medium heat.

    Add ground beef and cook until browned, breaking it up as it cooks.

    Add white and red onions and let everything simmer until onions soften and get glossy.

    Stir in garlic and ginger; cook 30–60 seconds until fragrant.

    Add coconut aminos (or soy sauce), hoisin, rice vinegar, sesame oil, and red pepper flakes. Stir well.

    Let simmer 2–3 minutes so the sauce coats the beef.

    Toss in green onions and stir for about 5 seconds (keep them vibrant).

    Taste and adjust seasoning or spice.
