Garlic Herb Butter Roast Chicken
this garlic herb butter roast chicken is one of my favorite easy one-pan dinners.

Ingredients
- 1 pasture-raised whole chicken (ideally air-chilled so it’s not soaked in chlorine)
- 1 stick butter (softened)
- 1–2 sprigs fresh rosemary
- 6–10 garlic cloves garlic (chopped)
- 2 tbsp salt
- 1 tbsp pepper
- 1 tbsp oregano
- 1 lemon
- 6 carrots carrots (chopped)
- 1 bag Yukon Gold potatoes
- 1 large white onion (quartered)

Method

Pat the chicken completely dry and place it in a roasting pan.

Mix together softened butter, rosemary, garlic, salt, pepper, and oregano.

Spread the butter all over the chicken and under the skin for maximum flavor.

Squeeze a lemon over the chicken and place it inside the cavity.

Add chopped carrots, Yukon Gold potatoes, and white onion around the chicken. Toss the veggies with olive oil, salt, and pepper (don’t be shy with the salt).

Roast at 350°F until the chicken reaches 165°F internal temperature. Mine took about 1 hour and 45 minutes.
Notes
Serve this as a beautiful centerpiece dinner, add a sauce if you want a little kick, and enjoy the best part: leftover roast chicken for easy meals all week.
