Crispy Paprika Air-Chilled Wings

Ingredients
- 2 lbs air-chilled chicken wings (preferably pasture-raised)
- 1/4 cup paprika
- 2 tbsp salt
- 2 tbsp black pepper
- Your favorite wing sauce (I love buffalo!)
- Ranch or blue cheese (for serving)
- Celery and carrots (optional)

Pat the wings completely dry with paper towels. The drier they are, the crispier they’ll get.

If you have time, let them sit uncovered for about 1 hour to dry even more. (You can skip this if you’re short on time.)

Toss the wings with the paprika, salt, and pepper until evenly coated.

Arrange them in a single layer on a parchment-lined baking sheet.

Bake at 415°F for 60 minutes, flipping every 20 minutes.

Immediately toss with your favorite wing sauce.

Serve with ranch or blue cheese and celery and carrots if you like.
