Burger Bowls

high-protein burger bowls for quick weekday lunches.

Ingredients

  • 3 lbs grass-fed 90%+ lean ground beef
  • 2–3 Roma tomatoes (chopped)
  • 1 large red onion (chopped)
  • 2 cups arugula (or lettuce of choice)
  • 2 avocados (sliced)
  • 2–3 sweet potatoes (chopped into 1” cubes)
  • Olive oil (for roasting)
  • salt & pepper
  • can hot peppers (1 can)
  • 1 block cheese (of choice, shredded or pre-shredded)
  • Chopped pickles
  • Mustard
  • Ketchup

Method

    Preheat oven to 400°F. Toss sweet potatoes with olive oil, salt, and pepper. Bake sweet potatoes for 30 minutes, tossing halfway through.

    While they bake, brown your ground beef in a skillet.

    Once your beef is about 75% cooked, stir in hot peppers and half of your cheese. Cook until fully browned.

    Build your bowls: Layer sweet potatoes on the bottom. Add your beef + cheese mixture. Sprinkle the remaining cheese on top to melt. Finish with tomatoes, onion, arugula, avocado, pickles, mustard, and ketchup.

    Enjoy fresh — or store in an airtight container for up to 5 days for easy meal prep lunches.

Big Mac energy, but make it clean.
