Longevity Minestrone
longevity minestrone: a hearty, protein-packed winter soup.
Ingredients
- 2 lbs ground beef (grass-fed, 90% lean)
- 2 tbsp olive oil
- 1 white onion, chopped
- 6 stalks celery, chopped
- 3 carrots, chopped
- 2 cups fennel, chopped
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- 5 cloves garlic, chopped or minced
- 1 can crushed tomatoes (28 oz can)
- 3 tbsp tomato paste
- 32 oz bone broth (chicken or beef) (bone broth has far more protein than chicken stock)
- salt, black pepper & red pepper flakes
- 1 bunch parsley, chopped
- 1/2 cup parmesan, grated (for topping)
Method

Brown your ground beef in a large pot, then set aside.

Add olive oil to the pot, then sauté onion, celery, and carrots for 5 minutes.

Add bell pepper, zucchini, fennel, and garlic — cook 3 minutes.

Season with salt, pepper, and red pepper flakes.

Stir in crushed tomatoes and tomato paste; simmer 1–2 minutes.

Pour in bone broth (add water for thinner consistency).

Add back your beef, stir, cover, and simmer 10–15 minutes.

Add beans & parsley, cook 10 more minutes.

Serve with parmesan & extra parsley on top.

Keeps in the fridge up to 5 days or freeze up to 6 months.
