Thai Chicken Meatballs
these thai chicken meatballs are a go-to clean-eating, high-protein, low-carb meal.
Ingredients
- 2 lb ground chicken (pasture-raised, organic, lean preferred)
- 1 zucchini, grated (excess moisture squeezed out)
- 3–5 carrots, grated (rainbow carrots optional for color)
- 1 green onions, finely chopped (sprig)
- ½ cup panko breadcrumbs
- 2 Tbsp soy sauce (or coconut aminos)
- 1–2 Tbsp chili paste (adjust to spice preference)
- 1–2 eggs ((2 eggs used for extra binding))
- 1 jalapeño, finely minced (Optional for extra heat)
- olive oil (for cooking)
Method

Add all ingredients to a large bowl.

Gently mix with your hands until just combined—do not overmix.

Cover and refrigerate for 15–30 minutes to help firm the mixture.

Roll into evenly sized meatballs.

Heat a pan over medium to medium-high heat and add olive oil.

Once oil is hot, add meatballs to the pan.

Sear for about 3 minutes per side, then gently shake or turn for the remaining time.
