Get Well Asian Noodle Soup

This week’s meatless Monday meal is a Get Well Asian Noodle Soup.

Ingredients

  • 8 oz extra firm tofu, drained and cut into small pieces
  • 2 tbsp paprika
  • 2 tbsp EVOO
  • 2 tbsp ghee or butter
  • 3 shallots, diced
  • 2 tbsp fresh ginger, diced
  • 2 garlic cloves, diced
  • 1 bunch green onion, diced
  • 5 cup bone broth
  • 8 oz mushrooms, sliced
  • 3 bell peppers, sliced
  • 2 heads bok choy
  • 1 tbsp soy sauce
  • 2 tbsp chili oil
  • 2 tbsp sesame seeds
  • 8 oz whole wheat noodles (I used Trader Joe’s)

    Method

      Preheat your oven to 400 degrees. Add tofu to a baking sheet and drizzle with olive oil and paprika and toss to coat evenly.

      Cook tofu for 20 minutes or until crispy on edges.

      Add ghee to a stock pan over medium heat until melted. Add shallots and cook for 3 minutes.

      Add in ginger, garlic, and 1/2 of green onion and cook 4 minutes stirring occasionally.

      Pour in bone broth, soy sauce, and chili oil and bring to a boil.

      Add in mushrooms, peppers, and bok choy. Cover pot and reduce heat to simmer for 7 minutes.

      Add in noodles and cook to package instructions (mine took 1 minute).

      Top with green onions and sesame seeds and enjoy!
