Fresh Spring Rolls

Ingredients
for the rolls
- Shrimp (cooked in butter, paprika, salt + pepper until pink)
- Rice paper wraps
- Cucumber
- Bell peppers (any colors!)
- Thinly sliced carrots
- Red cabbage
- Avocado
- Cilantro
- Thai basil
- Jalapeños
- Tomatoes
- Spring mix
- Microgreens
peanut dipping sauce
- 1 cup Peanut butter
- 1 tbsp Rice vinegar
- 2 tbsp Sesame oil
- 1/4 cup Soy sauce
- Water (Splash of water)
- Sriracha (Optional: for heat)

Cook your protein: Sauté shrimp in a little butter with paprika, salt, and pepper until pink. Set aside.

Prep the veggies: Chop or thinly slice all vegetables so they layer easily.

Soften the rice paper: Dip each wrap in lukewarm water for 20–30 seconds, then lay flat on your plate.

Assemble: Add your fillings to the center—about 60% of the wrap space.

Roll: Fold the sides in and roll tightly like a burrito. Set aside gently (they can tear easily!).

Make the sauce: Whisk all peanut sauce ingredients together until smooth. Let it rest while you prep so it thickens perfectly.
